Baked Mashed Red Potatoes


Let me just say, I LOVE potatoes.  I always have, always will.  These potatoes were actually supposed to be quite a bit different.  These were supposed to be stuffed potatoes, but they sort of fell apart while cooking and turned into baked mashed potatoes.  I was alright with adapting the recipe, especially since it meant that I got to use my brand new Le Creuset ramekins that I bought for a Valentines Day project at the Le Creuset outlet in Kansas City.  I had never been in the store before and I’m glad we went in.  I got four of these cute ramekins for $17.99.  For anyone who is familiar with Le Creuset pieces, you know I got quite a deal. 

Baked Mashed Red Potatoes Makes 4 servings – 150 calories each

Ingredients 8 small red potatoes

1 clove garlic, minced 1 tablespoon olive oil 3 tablespoons light mayonnaise 2 tablespoons grated parmesan cheese 1 teaspoon thyme


salt and pepper to taste

Preparation Preheat oven to 400 degrees.

Boil potatoes in medium pot until fork tender.

Saute garlic and oil in small skillet on low heat until garlic is soft, about 12 minutes. 

Combine all other ingredients in a medium bowl and add garlic and cooked potatoes.  Mash with a potato masher or a hand mixer.

Place mashed potatoes in greased casserole dish and bake for 20 minutes.
