Jalapeno Sweet Potatoes

Josh fell in love with a side dish at Free State Brewery, here in Lawrence about a month ago and has been asking me ever since to try to duplicate it.  His favorite side is now jalapeno sweet potatoes and I have to admit that their creation was wonderful.  I found the recipe online somewhere for a jalapeno sweet potato casserole and can not find it at the moment to post, but I thought I would share the pictures of the outcome and share the concept with some of you who may be skittish about sweet potatoes.  This recipe definitely makes them tolerable for someone who doesn’t like them very much at all.
