Two-Bean Burritos

I honestly didn’t try these, but Josh really liked them.  I was feeling crummy the day that I cooked these, so I didn’t try them.  I hear good things though 🙂

Two-Bean Burritos Makes 8 servings – 4 WW Points each

Ingredients 1 (14.5 oz) can diced tomatoes 1 (15.5 oz) can pinto beans, rinsed and drained 1 (15.5 oz) can black beans, rinsed and drained 1 (8.75 oz) can corn kernels, drained 3 tablespoons Mexican or taco seasoning 8 (8-inch) fat-free flour tortillas, warmed 16 tablespoons light sour cream

Preparation Pour off 1/2 cup of the liquid from the diced tomatoes, discard.  Combine the tomatoes, and the remaining liquid, the pinto beans, black beans, corn and Mexican seasoning in a 5 or 6 quart slow cooker.  Cook, covered, until the flavors are blended, 3-4 hours on high or 6-8 hours on low.

Fill warm tortillas with bean mixture and enjoy.
