We love BBQ and this wasn’t an exception to the rule. I’m usually not a big fan of coleslaw, but when I saw this recipe in my Hungry Girl cookbook, I thought that we should go ahead and try it out. . . It did involve BBQ after all. Both Josh and I enjoyed this meal and Josh even asked me to make some ahead sometime this week so that he could have it around the house for lunch and snacks when he gets hungry. I thought that rinsing the coleslaw would leave it tasteless and gross, but the gals (and guys) at Hungry Girl really know what they’re talking about when they say that all of the fatty mayo will go away but all he flavor stays.
Hungry Girl BBQ Chicken Wraps (AKA BBQ-riffic Chicken Wrap) Makes 1 wrap – 274 calories per wrap
Ingredients
1 medium low-fat flour tortilla (about 110 calories)
2 1/2 ounces cooked boneless skinless lean chicken breast, chopped or shredded
1/3 cup prepared coleslaw, rinsed until water runs clear (pat dry between paper towels)
2 tablespoons BBQ sauce
Preparation
In bowl, mix chicken, coleslaw and BBQ sauce.
Spread mixture on tortilla and roll-up.
Heat completed wrap in microwave for 25 seconds or until warm.
