Well, honestly, both Josh and I were a little bit disappointed in these, but I don’t think it was the fault of the recipe at all. We are big fans of Hebrew National 97% fat free hot dogs and they definitely have a very strong flavor. I think that the hot dogs definitely overpowered the corn breading and made it taste like we were just eating plain hot dogs. I think if I made these again, I would definitely try to find a different brand of hot dog to use.
Corn Dogs Makes 8 servings – 206 calories per serving
Ingredients 3/4 cup reduced-fat baking mix 1/4 cup cornmeal 4 teaspoons sugar 1/2 cup + 2 tablespoons fat-free milk 2 tablespoons unbleached or all-purpose flour 8 fat-free hot dogs
Preparation Preheat oven to 400 degrees. Coat a baking sheet with non-stick spray. Set aside.
In a shallow pan, combine the baking mix, cornmeal, sugar and milk. Place the flour on a plate.
Insert a pointed round wooden skewer into each hot dog and then roll the hot dog in flour first, then the batter to coat. Place on the prepared baking sheet. Coat each with non-stick spray.
Bake for 5 minutes. Turn the hot dogs over carefully with a spatulas. Coat each one with non-stick spray. Bake for 8 minutes, or until golden brown.
