Healthy Popcorn Shrimp


Here’s another Hungry Girl recipe.  This time, it’s for popcorn shrimp and it’s certainly comparable to the popcorn shrimp that you would buy frozen at the grocery store.  We paired this with the butternut squash fries that I posted yesterday and it was a pretty fulfilling meal.  Josh told me that he isn’t a huge fan of using only the Fiber One as the breading for things because it tastes a little too sweet to be on savory foods, so this time, I added in some Melba crumbs, Ranch dressing powder and reduced-fat parmesan cheese.

Healthy Popcorn Shrimp


Makes 2 servings – 180 calories per serving

Ingredients 8 oz raw shrimp, peeled and de-veined 1/4 cup fat-free egg substitute (i.e. Egg Beaters)

1/4 cup mixture of Fiber One Original Bran cereal, crushed 1/4 cup melba crumbs Hidden Valley Ranch Dressing powder Reduced-Fat Grated Parmesan Cheese

Preparation Preheat oven to 350 degrees.

Put raw shrimp on paper towel and pat dry completely.

Place egg substitute in a small bowl and add raw shrimp, mixing to coat shrimp completely.

Put dry ingredients in a ziploc bag and add dipped shrimp. Seal bag and shake to coat shrimp.

Remove shrimp to greased baking sheet.  Bake for 15-20 minutes, turning halfway through.
