Low Calorie Apple Blueberry Oat Pancakes

It’s been ages since we’ve had pancakes.  Actually, I don’t know that I’ve ever made Josh pancakes.  Either way, we had pancakes on both Saturday and Sunday mornings.  Don’t worry though, we had healthy pancakes.  Today’s post is the apple blueberry oat pancakes.  Tomorrow will be banana pancakes.

Low Calorie Apple Blueberry Oat Pancakes

Makes 2 servings – 252 calories each 

Ingredients 2/3 cup regular oats 4 tablespoons dry pancake mix 2/3 cup peeled and finely chopped apples 1/2 cup blueberries

1/2 cup Egg Beaters 2 tablespoons fat-free cottage cheese 1/2 teaspoon vanilla extract 2 tablespoons Splenda Dash of salt

Preparation Combine all ingredients except apples and blueberries in a medium bowl with 3 tablespoons of water and mix thoroughly.

Fold in apples and blueberries until combined.

Spray large skillet or griddle with non-stick spray and heat on medium heat.  Pour batter onto heated skillet or griddle to make 6 pancakes.  When pancakes begin to bubble, gently flip.  Cook on second side until cooked through.
